Crispy Mushroom Fried Rice Balls

These irresistible little treats are perfectly crispy on the outside and jam-packed with mushrooms, vegetables and umami flavor on the inside. Serve them up with a creamy avocado sauce for dipping.
Preparation Instructions:
Step 1
Thaw avocado according to package instructions.
Step 2
Prepare fried rice according to package instructions. Combine rice, mushrooms, scallions, soy sauce, sesame oil, kimchi, 1 egg, and panko. Mix well. Form into balls and chill.
Step 3
In a small bowl, blend avocado pulp, wasabi, lime, yogurt, and salt for sauce. Chill for service.
Step 4
Whisk 3 remaining eggs. Dip the formed rice balls in egg wash then lightly coat in additional panko. Fry until golden brown.
Step 5
Serve rice balls with avocado sauce. Garnish with unagi sauce, sesame seeds and microgreens.
