Tomato and White Wine Braised Snapper

Sweet and succulent king snapper fillets are paired with an Italian olive and white wine sauce.
Instructions:
1. Sauté onion. Add garlic, capsicum and cook until softened.
2. Stir through Leggo's Tomato Paste, wine and bring to the boil. Reduce to a simmer.
3. Meanwhile, steam Topsail Snapper Fillets until just cooked. Pan fry on both sides until golden.
4. Gently place snapper fillets on sauce and scatter with olives. Serve.
