Tasmanian Pepperberry Cauliflower Bites With Finger Lime Dipping Sauce

Native pepperberry adds spice to battered cauliflower pieces served with a finger lime mayonnaise.
Instructions:
1. Mix mayonnaise and finger lime pearls. Set aside.
2. Steam frozen Edgell Cauliflower Florets following packet directions, drain excess water and leave to cool.
3. Combine self raising flower, corn flour, half the pepperberry and soda water. Coat cauliflower in batter and deep fry for 3 minutes. Serve with mayonnaise and garnish with remaining pepperberry and parsley.
