Plant Based Tonkatsu Ramen

Plant-based tonkotsu ramen features a rich, creamy broth, served with noodles and fresh toppings for a flavourful, meat-free twist on the classic Japanese dish.
Instructions:
1. Simmer broth ingredients except stock, until fragrant. Add stock. Simmer for further 10 minutes. Set aside.
2. Cook Edgell Plant Based Schnitzel following packet directions. Slice.
3.Cook noodles following packet directions. Divide noodles between serving bowls.
4. Ladle hot stock over noodles. Top noodles with bok choy, mushrooms and sliced plant based schnitzels. Serve garnished with spring onion, furikaki, chilli and nori.
